Description
Chocolate hazelnut lovers delight! These delicious healthy Ferrero Rocher balls have a crunchy hazelnut and crispy chocolate outside, a creamy homemade hazelnut spread filling, and a whole roasted hazelnut in the centre.
Ingredients
Hazelnut Filling:
60g butter
60g roasted hazelnuts
20g cocoa
40g dark chocolate
60g maple syrup
1/2 tsp vanilla essence
The rest:
100g-150g finely chopped hazelnuts
200g-300g melted chocolate (we did some in Lindt milk chocolate and some in white chocolate)
1 tblsp coconut oil
20–25 whole roasted hazelnuts
Rubber gloves (you’ll see why!)
Instructions
For hazelnut filling:
- Place hazelnuts, cocoa and chocolate in the TM bowl and mix 10 sec / speed 9
- Add remaining ingredients and cook 3 mins / 60°C / speed 3.
- Refrigerate mixture until it hardens enough to roll into balls.
To assemble balls:
- Take ½ tbsp of hazelnut filling and push whole hazelnuts into centre. Then roll into balls.
- Pop onto a baking paper lined tray into freezer for 30 mins.
- Remove from freezer and dip balls into melted chocolate.
- Toss in finely chopped hazelnuts and return to freezer until hard.
- Once hard, remove them from freezer. Put rubber gloves on and put about a tablespoon of melted chocolate onto glove. Gently roll balls around in chocolate on gloves (this will ensure a good but thin coating) and place back in the freezer until set.
- Store in the refrigerator or freezer.
