Seriously, these no-bake healthy Ferrero Rocher balls are not only delicious, they pack some serious nutrition compared to their store bought counterparts, and there is no baking required!

For these healthy Ferrero Rocher balls you will need:
- Hazelnuts (roasted is a must in my book- see tips below!)
- Dark chocolate
- Butter
- Cocoa/cacao
- Maple Syrup
- Vanilla Essence
- Coconut oil
Step-by-step how to make Healthy Ferrero Rocher Balls
There are five steps to making these healthy Ferrero Rocher Balls. Making the hazelnut filling, putting the hazelnut in the centre, covering with chocolate, then crushed hazelnuts, then more chocolate!
First you need to make the delicious hazelnut spread filling. To do this place hazelnuts, cocoa and chocolate in the TM bowl and mix 10 sec / speed 9. Then add the remaining ingredients and cook 3 mins / 60°C / speed 3. Refrigerate mixture until it hardens enough to roll into balls. It should not be too soft, and roll in your damp fingers easily.
Once your hazelnut spread filling is ready to roll you are ready for the next steps of putting the whole hazelnut in the centre and covering these bad boys with chocolate and more crushed hazelnuts.
To do this take ½ tbsp of hazelnut filling, roll it into a ball with your fingers and push the whole hazelnuts into the centre, before giving it another roll to make sure it is nice and round. Then pop the balls onto a baking paper lined tray into freezer for 30 mins while you get your melted chocolate and crushed hazelnuts ready.
Remove the balls from the freezer and dip them into melted chocolate. Toss them gently in the finely chopped hazelnuts and return to them to the freezer until hard.
Now here’s where the rubber gloves come in handy! Once the balls are hard, remove them from the freezer, put rubber gloves on and put about a tablespoon of melted chocolate onto a glove. Gently roll balls around in chocolate on gloves (this will ensure a good but thin coating) and place back in the freezer until set.
Once this layer of chocolate is hard, your decadent chocolate hazelnut balls are ready to enjoy. These healthy Ferrero Rocher balls are incredibly delicious and not only make a beautiful edible gift, but are the perfect end to a dinner with friends, or a sneaky treat with a cup of tea!
Tips
- It is optional of course, but roasting the hazelnuts enhances their lovely flavour, making these healthy Ferrero Rocher balls even more delicious. You can of course make them without roasting, and whilst they will still be yummy, the flavour will not compare!
- To roast, simply place them on a lined baking tray in a single layer and roast at 160c (320F) for 10-15 minutes, tossing them a couple of times mid-bake.
- If the hazelnuts still have skins, once roasted, pop them in a tea towel, fold the tea towel over them and rolls them around on your counter top several times. Little bits of skin are sometimes hard to remove, but don’t worry too much, it won’t affect the end result!
- Good quality chocolate is a must for me. It brings any chocolate treat to another level. Some good quality chocolate bar brands I reach for are: Green & Black’s Organic or Lindt- I used a combination of 70%, creamy milk and white Lindt chocolate for these balls.
- Rubber gloves! Grab yourself a pair for this recipe. They make rolling that final thin layer of chocolate on the balls much easier, not to mention less messy!

- Use crushed roasted peanuts on the outside. We have done this a few times when I had run out of hazelnuts. The balls were a little crunchier, obviously it changed the flavour a bit. They were still delicious! That, and crushed peanuts can be purchased pre-crushed, so it was a time saver! Print

- Once hard, remove them from freezer. Put rubber gloves on and put about a tablespoon of melted chocolate onto glove. Gently roll balls around in chocolate on gloves (this will ensure a good but thin coating) and place back in the freezer until set.
- Store in the refrigerator or freezer.
