I know there are so many black bean brownie recipes out there BUT…I am claiming this one as the best! This is as close to taste and texture of a good ol’ fashion brownie without the processed ingredients that I reckon you’ll find! I have tweaked and re-tweaked this brownie to perfection! I think quality ingredients make all the difference too 🙂
Ingredients
1 400g can organic black beans drained and rinsed
3 eggs
35g (1/3 cup) organic cocoa
60g (1/4 cup) grass fed organic butter
110g (1/2 cup or 6 large) organic fresh Medjool dates
2 tsp baking powder
2tsp vanilla essence
decent pinch of salt
130g (3/4 cup) good quality organic choc chips
More choc chips to decorate
Method
Preheat over to 170°c + line 24cm x 24cm baking tin with baking paper.
Add all ingredients except choc chips to TM bowl (or food processor) and blend speed 9 / 30 secs. Scrape sides of bowl and blend for a further 10-15 secs if not smooth.
Add choc chips and mix reverse / 5 sec / speed 3.
Scrap into baking tin and sprinkle with extra choc chips.
Bake for 35-40 mins. Start checking from 30 mins. Brownie is cooked with it springs back lightly in the centre and a skewer comes out clean.
Cool in tin for 10 mins before moving to a cooling rack to cook completely before cutting.
OR
Eat warm as a dessert with your choice of yogurt or ice cream!
