I have tried SO MANY oat free/grain free porridges over the years. For me, this one certainly takes the cake. It has the right consistency and color, and believe it or not, despite the inclusion of coconut cream, it does not have an overbearing coconut flavour! The apple gives it a lovely sweet tang. You can of course leave the apple out if you are eating a very low carb diet.

 

Makes one serve.

Ingredients

2 tbsp (20g) golden flaxseeds (you can use brown, it will just be a little darker in colour).

2 tbsp (20g) slithered almonds (or other blanched almonds)

1 tbsp (10g) organic hemp seeds

1Tbsp grassfed collagen powder

½ tsp organic cinnamon

½ cup organic coconut cream

1tsp-1tbsp MCT oil

½ tsp vanilla

1 (90g) small organic apple

Optional: I also add 1 or 2 organic brazil nuts for my daily selenium.

 

Method

For porridge with some crunch and texture:

Blitz dry ingredients 3 sec / speed 9

Add wet ingredients and blitz 10 sec / speed 5

Heat 2-3mins / 90c / speed 1

 

OR

 

For smoother porridge

Place all ingredients in TM bowl and blitz 10 sec / speed 9

Heat 2-3mins / 90c / speed 1

 

Optional:

Top with warmed berries and a sprinkle of nuts and/or seeds for some crunch.

Double the recipe, or make as many serves as you like and store in the fridge to eat for breakfast or snacks!

 

A word on buying MCT Oil

When you buy MCT oil, ensure it is organic, hexane free,100% pure and derived from coconuts.

 

Never heard of MCT oil?

Medium-chain triglycerides (MCT) are a type of saturated fat. Unlike long-chain fatty acids, they don’t require bile acids for digestion and pass directly to the liver. Basically they are a great source of easily digestible energy that get burned as fuel instead of being stored as body fat.
