Choc Chip Cookie Dough Balls

Need some quick mid week snacks for lunchboxes? These fit the bill. Make them while you are cooking dinner. You’re in the kitchen anyway! You will need a food processor or Thermomix. Enjoy!

 

// ingredients \\

  • 2 cups organic rolled oats
  • 3 tblsp organic desiccated coconut
  • 7 Medjool dates
  • 1tsp vanilla
  • 5 tblsp water
  • ½ cup enjoy life choc chips (or other additive free choc chips)

 

// method \\

Put oats and coconut into thermomix 5 sec / speed 9

Add dates, vanilla, & water. Mix  30 sec / speed 5

Add choc chips and gently mix reverse / 10 sec / speed 3

Use a ½ tablespoon to measure out portions and roll.

I store in the freezer. Lunchbox friendly!
