Fruity nut breakfast cookies

Breakfast on the go? Snack? You choose! Gluten/Grain/Dairy Free. These literally take minutes to make. So simple! For those with a Thermomix, you have probably heard of CADA (coconut, almond, dates + apple) that you blitz into a breakfast cereal. Got me to thinking, how could I make this a hand held food to go?! So I blitzed the mixture a little longer and ta-da! Fruity nut breakfast cookies! These will definitely be going into the lunchbox rotation!

Equal parts:




Almond (or other seed/nut combinations see below)

Preheat oven to 150°c

Blitz all ingredients on turbo for 3-6 secs. Roll tablespoons of mixture and place on baking tray lined with baking paper.

Bake cookies 150°for 20 mins or until they begin to brown.


I used 150g of each ingredient. For nuts/seeds I used a combination of hemp seeds, pepitas, almonds + pecans.  Each nut + seed has a different nutritional profile, and our gut bacteria love variety, so I like to use as many different types as I have in the pantry!

I have also made them with all activated pecans and they were delicious!

You could add cinnamon, vanilla, use whatever nuts or seeds your heart desires or replace some of the dates with other dried fruit. So many possibilities!!  Enjoy!
