Healthy Chicken Enchiladas

These are a hit in our house! Everyone fights for the leftovers for lunch the next day! This meal can easily be bulked out with a can or two of beans to serve more people. I often pre-make the chicken mix and freeze it in batches. That then makes this a very quick and easy weeknight meal! If I have lots of time, I will even make the wraps. I’ll share that recipe another time! So ditch those packets of Mexican Seasoning for this whole food, tasty alternative.

Ingredients

1kg free-range chicken thighs diced into small cubes
3 tbsp flour ( I used organic buckwheat flour)
2 tbs duck fat
2 brown onions diced finely
4 cloves of garlic minced
500g organic passata
150g (½ cup) organic tomato paste
1tbsp homemade vegetable or chicken stock
1tbsp coconut sugar
1tsp paprika
1tsp cumin powder
1tsp sea salt
1tsp dried oregano
1tsp chipotle powder (or smoked paprika)
150g (½ cup) sour cream*
A jar of organic salsa
300g organic tasty cheese grated
8 large wraps. We used Gluten Free Precinct Wraps. Organic Mountain Bread wraps also work well if you are not avoiding gluten.

Method

Coat chicken in flour and brown in a large frypan in duck fat.
Add chopped onions and garlic and fry until soft.
Add remaining ingredients except sour cream, cheese and wraps. Cook for 10 minutes, or until chicken is cooked all the way through.
Turn off heat and stir through sour cream.
Place 3 or 4 tablespoons of mixture along short side of wrap. Work quickly to roll wrap and place in a rectangular glass baking dish.
Repeat until you have used all wraps.
Spread salsa over all rolled up wraps and then sprinkle over grated cheese.
Bake at 180c for 20 minutes, or until the cheese is melted and beginning to brown.

Serving Suggestion:

Serve with guacamole, more sour cream, coriander + a green salad.

Easily serves a family of 5. You can bulk out the chicken to make this dish go further by adding a can of organic cannellini or other white beans when adding bulk of ingredients at step 3.
