Salted Caramel Bars

Creamy, buttery caramel bars with a thin layer of crisp chocolate on top! I have been experimenting with some recipes using staple pantry ingredients. Here’s my take on a buttery, creamy caramel using ingredients you hopefully have in your pantry!

1 cup (80g) of organic oats (we use gluten free oats)

½ cup (35g) organic shredded/desiccated coconut

5 tbsp (60g) butter

¼ tsp sea salt

Approximately 13 (200g) Medjool dates

1tsp vanilla

100g Lindt 70% chocolate

Grate chocolate in TM bowl 4 sec/speed 9. Melt for 3 min/50°/speed 2. Half way through, remove lid of TM bowl and scrape down any chocolate from sides or any that is on top of blades.  Set aside and wash and dry TM bowl.

Add oats + coconut to TM bowl and mix 10 sec/speed 5.

Add remaining ingredients + blend 1 min/speed 9, stopping after 30sec to scrape down bowl.

Press caramel into baking paper lined tin (mine measured 27cm x 15cm)

Pour melted chocolate evenly over base + refrigerate until set

Slice in bars + enjoy!
